Paul who hails from the Waikato and was trained at Wintec returned to Hamilton in 2001 after travelling and working in Europe and the US. Paul now heads the team at Iguana, one of Hamilton's iconic restaurants.

Johnny trained at the George Brown culinary institute based in Toronto, Canada and via travel in Canada and Australia found himself in Hamilton. Johnny's food combines passion and flair with a mixture of modern techniques combined with classic comfort foods and a focus on local sustainable produce.
