Head Chef, Madam Woo
Born in Malaysia, the youngest of five, Jane Leong grew up working in her family's traditional coffee shop, you could say hospitality is in her blood. After completing her formal Chef Training in Malaysia under a Swiss program , Jane travelled to Western Australia before joining the opening team at Gordon Ramsay’s Maze restaurant in Melbourne. Here under Head Chef, Josh Emett, Jane worked her way up to Sous Chef before making the move to Queenstown NZ in 2012 and again worked with Emett in his signature restaurant, Rata. In 2013 Emett & business partner Fleur Caulton open-end a new concept, Madam Woo with Leong at the helm as head chef. The Madam Woo concept has gone from strength to strength with four sites Nationwide, serving up authentic, big flavours that Leong grew up with. Jane is the resident Chef Trainer for Madam Woo and is currently based in the Hamilton restaurant as Head Chef.
